Actaully I think dropping to 500 is low. The car can stall going that low. Is the car completely stock? If so then keep it at like 700-800 range. If you have anything aftermarket. like BOV or cams or lightweight flywheel, I would raise it to 1,000rpm. Believe it or not people with really beefed up cars raise it to 1300 sometimes. Also dont think that by raising it up there your harming the engine. Test have shown that it actually is benificial to the motor and especially to the turbos. This is because it makes the oil flow through the turbos better and if you know much about turbo cars, if the oil doesnt flow you get caking in the turbos, killing them. Sooooo like I said (and if you dont believe me do some searching) its actually good for a turbo motor.
